- 1 cup of skim milk
- 1 cup of vanilla yogurt or kefir
- 1 cup of old-fashioned rolled oats
- 1/2 tsp vanilla extract
- 2 tbsp honey
- fresh or frozen berries
Mix everything but the berries together.
Spoon the mixture into a parfait cup and top with berries.
Cover with plastic wrap and let it rest in the fridge overnight (the oatmeal needs time to absorb moisture).
Keeps in the fridge for up to 3 days.
